The 2020 vintage of 2019's “Best of Show” Chardonnay opens with aromas of white grapefruit, kiwi, and fresh pineapple. Each vintage, winemaker Julian Halasz seeks to balance this wine’s piercing acidity and aromatics with a creamy body via the wine’s “lees character.” Lees are remnants of the fermentation yeast: stirring them regularly makes the wine hedonistically creamy without any oak influence, all while keeping it bone dry. This year, the lees impart hints of orchard blossom and a long, brioche finish.
